Shou mei is a grade of white tea that has everything: tea buds, tea leaves, and twigs. The quality of a shou mei is determined by the ratio of each type of material. Our 2016 Shou Mei White Tea is a very balanced cake in that regard. These tea leaves were picked and pressed into cakes in the autumn of 2016.
The dry tea leaves release a comforting scent of wild honey and fallen autumn leaves. The wet leaves have a more complex smell, ranging from apricot jam and floral sweetness to deep woody notes. It has the classic flavors of an aged shou mei - rich, spicy, sweet, and slightly medicinal. This 2016 Aged Shou Mei is the perfect tea to keep you company in autumn and all the way through winter.
Suggested Brewing:
1. Gaiwan Brewing ratio: 1/24
5 g in a 120 ml gaiwan using 212 F water.
2. Later switch the same tea leaves to boiling, we suggest 1/80 ratio. 5 g tea in a tea kettle with 400 ml of water.
How do we brew it?

2. Transfer the same tea leaves to a kettle for boiling, we suggest 1/90 - 1/100 ratio.
5 g tea in a tea kettle with 450 - 500 ml of water.
When you boil tea, the ratio makes a big difference in how your tea will taste. If you are new to boiling tea, we strongly recommend that you start with our suggested ratio of leaf to water. If you are familiar with boiling tea, feel free to play by ear and adjust as you go.
